Cordyceps Ginger Broth

Ingredients:

  • 1 tablespoon sesame oil
  • 1 small onion, thinly sliced
  • 2 carrots, julienned
  • 1 teaspoon dried cordyceps mushroom extract
  • 4 cups vegetable broth
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce or tamari
  • 1 cup cooked rice noodles or rice
  • Fresh cilantro leaves for garnish

Instructions:

  1. In a pot, heat the sesame oil over medium heat. Add the sliced onion and julienned carrots. Sauté until the vegetables are slightly softened.
  2. Stir in the dried cordyceps mushroom extract and sauté for a minute.
  3. Pour in the vegetable broth and bring to a simmer. Let it cook for about 15-20 minutes.
  4. Add the grated ginger and soy sauce. Simmer for an additional 5 minutes.
  5. Place the cooked rice noodles or rice in serving bowls.
  6. Ladle the hot broth over the noodles or rice.
  7. Garnish with fresh cilantro leaves and enjoy the warming cordyceps benefits.
