Ingredients:
- 1 tablespoon sesame oil
- 1 small onion, thinly sliced
- 2 carrots, julienned
- 1 teaspoon dried cordyceps mushroom extract
- 4 cups vegetable broth
- 1 tablespoon fresh ginger, grated
- 2 tablespoons soy sauce or tamari
- 1 cup cooked rice noodles or rice
- Fresh cilantro leaves for garnish
Instructions:
- In a pot, heat the sesame oil over medium heat. Add the sliced onion and julienned carrots. Sauté until the vegetables are slightly softened.
- Stir in the dried cordyceps mushroom extract and sauté for a minute.
- Pour in the vegetable broth and bring to a simmer. Let it cook for about 15-20 minutes.
- Add the grated ginger and soy sauce. Simmer for an additional 5 minutes.
- Place the cooked rice noodles or rice in serving bowls.
- Ladle the hot broth over the noodles or rice.
- Garnish with fresh cilantro leaves and enjoy the warming cordyceps benefits.
