Ingredients:
- 2 tablespoons butter or olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 250g fresh lion's mane mushrooms, chopped
- 1 teaspoon dried lion's mane mushroom extract
- 4 cups vegetable broth
- 1 cup heavy cream or coconut cream
- Salt and pepper to taste
- Fresh thyme leaves for garnish
Instructions:
- In a pot, melt the butter or heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and chopped lion's mane mushrooms. Cook until the mushrooms are tender.
- Stir in the dried lion's mane mushroom extract and sauté for a minute.
- Pour in the vegetable broth and bring to a simmer. Cook for about 15-20 minutes.
- Use an immersion blender to blend the soup until smooth.
- Stir in the heavy cream or coconut cream and let it simmer for an additional 5 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh thyme leaves.
