Lion's Mane Creamy Mushroom Bisque

Ingredients:

  • 2 tablespoons butter or olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 250g fresh lion's mane mushrooms, chopped
  • 1 teaspoon dried lion's mane mushroom extract
  • 4 cups vegetable broth
  • 1 cup heavy cream or coconut cream
  • Salt and pepper to taste
  • Fresh thyme leaves for garnish

Instructions:

  1. In a pot, melt the butter or heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic and chopped lion's mane mushrooms. Cook until the mushrooms are tender.
  3. Stir in the dried lion's mane mushroom extract and sauté for a minute.
  4. Pour in the vegetable broth and bring to a simmer. Cook for about 15-20 minutes.
  5. Use an immersion blender to blend the soup until smooth.
  6. Stir in the heavy cream or coconut cream and let it simmer for an additional 5 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh thyme leaves.
