Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried turkey tail mushroom extract
- 4 cups chicken or vegetable broth
- 1 cup diced cooked chicken or tofu (optional)
- 1 cup mixed vegetables (such as carrots, peas, and corn)
- Salt and pepper to taste
- Fresh parsley or dill for garnish
Instructions:
- In a pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent.
- Add the minced garlic and sauté for another minute.
- Stir in the dried turkey tail mushroom extract and cook for a minute.
- Pour in the chicken or vegetable broth and bring to a simmer. Let it cook for about 15-20 minutes.
- Add the diced cooked chicken or tofu (if using) and mixed vegetables. Simmer for an additional 10 minutes.
- Season with salt and pepper to taste.
